Noodles !
Noodles are the staple in the Far east. It is eaten as a between meal snack, or with spicy soups at lunch or dinner. In the Far East / Orient the noodles are accompanied with spicy thin soups and vegetables or portions of meat, sea food and herbs / vegetables.
In South Asia noodles are eaten with a variety of seasonings / tempering - either with vegetables or herbs or coconut milk with jaggery / organic brown sugar.... the options are quite infinite! Another difference between South Asian and Oriental noodles is that in South Asia noodles are made with flour itself - either rice flour or all purpose baking flour.
But in the Orient - like Vietnam, Korea, Laos rice flour is steamed with tapioca flour and the soup of steamed rice flour is rolled out (rendering it into a very tough sheet) and cut into noodles giving it a shiny reflection. On the one hand it may call for cultivating a taste; but it is certainly lighter on the stomach in comparison to South Asian rice flour based noodles.
In Europe noodles or spaghetti are eaten with thick rich creamy white sauce with egg yokes, cheese spread, pepper, salt, cumin and other herbs being the mildest varieties of flavours that are added to the white sauce.
Here we present a wide variety of noodle dishes - a feast for the eye!
